WP3 aims to identify and characterise the main stakeholders involved in the production and valorisation of the products. The WP results will contribute to increase our knowledge in the current situation of the market in order to improve the position of the local products in the market chain. The products that will maintain their commercial ground, adapt to the market needs and demands, without losing their specificity, originality and authenticity will be able to defend their markets or develop them.
